It use to be that they would hire anyone willing to work and that could be trained. This is not a glamorous job. Sometimes the owners would hire people they had never met and send them out to the better workers to get a judgment on their abilities. Now they mostly look for college graduates. The problem now is that most recent college graduates can't handle working in the field.
